
Quick and Easy Meatballs
*Gluten Free, Soy Free, Dairy Free
Serves 4
Ingredients:
1 lb. ground beef
1/2 c. rolled oats
1 egg
2 Tbsp. Ketchup
1 Tbsp. fresh parsley (or 1 tsp. dried)
1 Tbsp. minced onion
1 Tbsp. grated parmesan (optional, skip for dairy free)
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
1/2 tsp. onion powder
*Increase amounts of seasonings if you like extra flavor!
Instructions:
1. Preheat oven to 375°F. Line a baking sheet with foil and spray with a soy-free cooking spray or rub with olive oil.
2. Combine all ingredients into a large bowl and mix until combined. Be careful not to over-mix, it will make the meatballs tougher and less flavorful.
3. Roll the mixture into balls 1-2 inches thick, try to keep them as uniform as possible, and place them on baking sheet.
4. Bake 15-20 minutes, or until cooked through. May need to increase cooking time if working with larger meatballs.

*Side Note: I have labeled these meatballs "gluten free" however there is some controversy surrounding oats, and whether or not they contain gluten. If you are gluten-free, do a little research on the subject and use your own judgement to decide if you want to include oats in your diet!
