
Oven Roasted Broccoli
Gluten Free, Soy Free, Dairy Free, Vegan, Whole 30
Serves 3-4
Ingredients:
3 Broccoli crowns
1 1/2 Tbsp. Olive oil
1 1/2 Tbsp. Balsamic vinegar (optional)
Salt
Pepper
Instructions:
1. Preheat oven to 400°F.
1. Wash broccoli crowns and cut florets from stems.
2. In a bowl, toss broccoli with olive oil and balsamic (if using), and salt and pepper to taste.
3. Pour broccoli on a baking sheet, lined with foil for easy cleanup, and bake for 6-8 minutes or until they reach desired softness.
4. Enjoy! :)
Friendly Tips:
- The ingredient amounts can absolutely be played around with in this recipe to serve more or less people. If you are using both the oil and vinegar, I recommend sticking with a 1:1 ratio and using your own judgement for the amounts. (I never actually measure anything when I make this).
- To me, the balsamic vinegar flavor doesn't always go with my main dish, so when I am using just olive oil, I usually toss with some onion powder and garlic powder as well for more flavor!
- I like to add some sliced shallot and mushrooms on occasion for a little extra veggies and fanciness!
- Some shaved parmesan goes very well on top too, although the recipe would then no longer be dairy free, vegan, or whole 30, so keep that in mind!
