
Super Simple Baked Chicken
Gluten Free, Soy Free, Dairy Free, Whole 30
Serves 3-4
Ingredients:
1 lb. boneless skinless chicken breasts, or chicken breast tenders
1 Tbsp. olive oil
1 Tbsp. Balsamic vinegar
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. paprika
Instructions:
1. Preheat oven to 400°F.
2. In a small bowl, mix together salt, pepper, garlic powder, onion powder, and paprika.
3. Place chicken into a baking dish and drizzle with 1/2 Tbsp. olive oil and 1/2 Tbsp. balsamic vinegar and rub or brush to evenly coat. Then sprinkle with half of the seasoning mixture.
4. Flip chicken over in dish and repeat with the remaining olive oil, balsamic vinegar, and seasoning mixture.
5. Bake about 27-32 minutes, or until chicken reaches an internal temperature of 165°F and/or juices run clear.
*Tip: if the chicken breasts you are using are very thick, I recommend pounding them out a little, or increasing the cook time beyond the 32 minutes if needed. If you are using chicken breast tenders, I have found that the cook time is closer to 23 minutes.
