
Lemon Rice Pilaf
Gluten Free, Soy Free
Serves 4-6
Ingredients:
3 Tbsp. butter
1 c. long grain white rice
16 oz. chicken broth or stock
2-4 Tbsp. lemon juice
Water
Parsley flakes
Salt & Pepper
Instructions:
1. In a large measuring cup, combine the liquid ingredients - 16 oz. chicken broth and 2-4 Tbsp. fresh lemon juice (depending on how strong you like your lemon flavor). Then add enough water to reach a total of 20 oz. of liquid (about 2-3 oz.)
2. In a medium saucepan, melt butter over medium-low heat. Once melted, add in the rice and toss to coat. Let cook for about a 30-60 seconds.
3. Add liquid mixture and a bit of lemon zest, stir, and bring to a boil.
4. Once this reaches boiling, reduce to a simmer, cover, and cook for about 20 minutes until liquid is absorbed.
5. After the rice is fully cooked, add salt, pepper and parsley flakes to taste and fluff rice with a fork to combine.
6. Squeeze a little extra lemon juice on top if desired and serve.
