Gluten-Free Crockpot Chicken Noodle Soup


Gluten Free, Soy Free, Dairy Free

Makes 6-8 Servings

Ingredients:

1 container Trader Joe's mirepoix mix

1 package Trader Joe's gluten-free egg fettuccine noodles (fresh)

3-4 (17 fl oz. each) cartons Trader Joe's chicken bone broth

2 boneless skinless chicken breasts (about 1-1.5 lb)

2-3 tsp minced garlic 

1/2 tsp. salt

1/2 tsp. rosemary

1/2 tsp. thyme

1/4 tsp. black pepper


Instructions:

1. Place chicken breasts on bottom of 5qt crockpot (or larger) and top with mirepoix mix, garlic and seasonings.

2. Add 3 cartons of bone broth (or 4 if you prefer more broth) and cook on low for 7-8 hours or high for 3-4 hours.

3. Transfer chicken breasts onto cutting board. Using 2 forks, shred the chicken and return it to crockpot.

4. Remove noodles from package, gently separate and cut or tear into small pieces and add to crockpot. 

5. Let cook for another 3-4 minutes until noodles are tender.

Friendly Tips:
1. The mirepoix mix really takes out all the prep work, but if you cannot find it at your local grocery store or if you are on a tighter budget, you can chop your own onion, carrots, and celery instead!
2. You can also substitute regular chicken broth or stock for the bone broth.
3. If not using fresh noodles, you can either boil them in a separate pot until al dente before adding, or just cook them in the crockpot for longer. You can also use regular noodles if you do not want gluten-free!
