Creamy Parmesan Garlic Sauce

Gluten Free, Soy Free

Serves 4-6

Ingredients:

3 Tbsp. butter

2 tsp. minced garlic

2 Tbsp. gluten free flour (or regular for non-gluten free)

1 c. milk

1 c. chicken broth or stock

1/2 c. parmesan

1/4 tsp. parsley flakes

1/4 tsp. black pepper

1/4 tsp. garlic powder

1/4 tsp. onion powder

1/8 tsp. mustard powder

Salt to taste

Instructions:

1. Add butter and minced garlic to sauté pan and cook on low heat for about 30-60 seconds or until aromatic. Then whisk in the flour to create a roux.

2. Slowly add milk and continuously whisk to get a smooth, clump free, consistency. Then stir in the broth (or stock), mustard powder, parsley flakes, onion powder,  garlic powder, and black pepper. Increase heat to medium and let this cook for a few minutes until the sauce thickens.

3. Once the sauce has thickened, reduce heat to a simmer, add the parmesan cheese and stir to combine. Continue to cook until cheese is melted. Add salt to taste and any additional seasoning for extra flavor if you feel it needs it.

4. Toss with a gluten-free pasta of your choosing (or regular) and serve immediately.

Friendly Tips:

1. You can make this sauce ahead and store it in an air tight container in the refrigerator for 3-5 days. This sauce can also be served over veggies, meats, or as a dipping sauce.

2. Substitute vegetable broth or stock to make vegetarian.

3. If your sauce is not thickening enough, before adding the cheese, transfer a spoonful of the sauce into a small bowl and whisk in some additional flour. Then, whisk that back in with the rest of the sauce and continue to cook to desired thickness.
