
Classic Rice Pilaf
Soy Free
Serves 4-6
Ingredients:
1 c. Rice
1/4 c. Vermicelli noodles
2 Tbsp. Butter
14 oz. Chicken broth
6 oz. Water
Salt
Pepper
Instructions:
1. Break up vermicelli noodles into small pieces. You could skip or substitute gluten free spaghetti noodles for gluten free option.
2. In a medium sauce pan, melt butter over medium heat and add vermicelli. Cook and stir until golden brown. (Note: the vermicelli can burn very quickly so I recommend removing them from the heat as soon as they turn the slightest bit brown and continuing to stir off the heat to finish cooking.)
3. Add the rice and stir to coat with the butter and distribute vermicelli.
4. Add the chicken broth and water and bring to a boil.
5. Reduce to simmer. Cover and cook about 20 minutes or until liquid is absorbed and rice is soft.
6. Salt and pepper to taste
