
Cashew Coconut Date Bars
Gluten free, Soy Free, Dairy Free, Vegan, Whole30
Serves 8
Ingredients:
2 c. (approx. 12) Medjool dates
3/4 c. roasted cashews
1/2 c. unsweetened shredded coconut
1/4 c. mixed nut butter (or any nut butter)
Pinch of sea salt
1/2 tsp. cinnamon (optional)
1/2 tsp. vanilla (optional, skip for Whole 30)
Instructions:
1. Preheat oven to 350°F. Spread cashews out evenly onto baking sheet and roast for about 5-7 minutes, until fragrant (be careful not to burn). Remove from oven and let cool.
2. Once cashews are cool, pour them into a food processor along with dates, coconut, cinnamon, and salt. *Be sure to buy pitted dates, or remove the pits before putting them into food processor. Pulse until a crumbly mixture is formed.
3. Add the nut butter (I prefer Trader Joe's Mixed Nut Butter) and vanilla if desired, and pulse until clumps begin to form.
4. Line an 8x8 baking dish with parchment paper and pour in mixture. Press the mixture down evenly and top with another piece of parchment paper.
5. Place refrigerator or freezer for ~20 minutes to firm.
6. Cut into 8 bars. Can be in refrigerator or freezer, covered, or individually wrapped.
